A Beginner’s Guide to Homemade Pasta Sauce

Pasta sauce is an integral part of Italian cuisine. Surprisingly, it is also an easy DIY creation. Both red and white sauces can be made in less than 30 minutes and can impress your friends and family more so than the same old sauce from a jar. Marinara sauce is one of the easiest sauces to create. First, sauté any onions or garlic. Recipes will vary on the amount, so you can usually just add in however many you would like for your flavor preference. The most important part of the sauce is the tomatoes. Many recipes call for crushing the tomatoes by hand right before adding them to the sauce to help break down the tomatoes. However, if you are in a hurry, you can save time by adding tomato paste or sauce. After you add the tomatoes or sauce, next mix in the herbs such as basil or bay leaves. The sauce then typically needs to simmer for at least 20 minutes, which allows for thickening.


Cream sauces like Alfredo sauce may seem daunting at first but are worth the effort.  The main ingredients are typically cream or milk and Parmesan cheese. The general rules for Alfredo sauce involve melting butter in a saucepan and then adding cream or milk and spices such as garlic. You need to let the sauce base simmer for 5-10 minutes while stirring often. If the sauce isn’t thickening, try adding a small amount of flour or cornstarch to help. After thickening, add shredded Parmesan cheese to generate a creamier texture that pairs perfectly with fettuccine.


If you are looking for a hearty red sauce to whip up for your next pasta dish, then Bolognese sauce is just the ticket. Bolognese traditionally minced beef and pork, tomatoes, onion, garlic, and carrots. Start with a combination of cooking ground beef and sausage. Add sautéed onion, garlic, and carrots to taste. To finish the sauce, add tomato paste. Often times, the sauce will be very thick. If this is the case, dilute it a little with some water. Some recipes call for adding tomato sauce instead of paste, which gives it a more soup-like consistency.


Basic pesto sauce consists of ground basil, garlic, pine nuts, and olive oil. Some variations also call for shredded Parmesan. To create your pesto sauce, combine all of the ingredients in a food processor and blend until smooth. Depending on your preferences, using raw garlic may make your pesto sauce too potent. An easy way to tone down the garlic is to sauté or roast the garlic before processing.
